This mix of 15 Cretan herbs from Evergetikon brings the flavours of the island together in one jar. You taste sage, rosemary, mountain tea and diktamos, among others, with lemon verbena for a fresh, lemony note. Pour hot water over it and your kitchen smells of the Cretan hills straight away: herbal, warm and a little floral. On Crete, herb tea has been made for generations from what grows in the mountains, such as mountain tea and diktamos.

How you use it
Put a generous teaspoon of herbs in a teapot or tea infuser and pour a cup of hot water over them. Leave to steep for 5 to 10 minutes and strain the herbs out. The longer you steep, the fuller the flavour. Good with a spoon of honey or a slice of lemon. For iced tea, let the tea cool and put it in the fridge. Store the herbs dry and well sealed.
